Origin

The mountains of Lebanon and Syria, particularly the area around Mount Lebanon where parsley grows abundantly. The village of Douma in Mount Lebanon claims to be the birthplace of tabbouleh.

History of the Dish

Originating in the mountains of Lebanon and Syria over 400 years ago, tabbouleh was originally a way for Levantine farmers to use abundant parsley harvests. Unlike modern variations that use mostly bulgur, authentic Lebanese tabbouleh is 80% parsley—a green herb salad with just enough bulgur to add texture.
